Puree Monday: Popeye's Delight
Puree Monday is back!! Here is a fun recipe for your little one and it’s packed full of nutritional goodness. It makes a great puree but also a wonderful mix-in for scrambled eggs, frittatas, noodles, spread on toast and sprinkled with cheese...the possibilities are endless! Bebe B loves this recipe! You may find the more you puree the easier it will be to get your little one to try it at first! Happy Cooking.
Popeye’s Delight Puree - 8 Months+
3 cups packed fresh spinach (of frozen thaw and drain)
1/4 cup plain Greek Yogurt
2-3 tsp olive oil
1/2 tsp turmeric
1/2 tsp cinnamon
1/4 tsp nutmeg
Clean and chop the fresh spinach. Steam the spinach in either a steaming basket on the stove or in the Beaba babycook. If using the babycook fill water to the 2 mark for a full basket. If steaming on the stove use about 2 inches of water and steam for about 5-6 minutes. The spinach should wilt and cook down but still be bright green. If using frozen spinach (thawed and drained) the steaming time may vary so watch closely. Reserve the cooking liquid. Next add the olive oil and spices to a small saucepan and heat on medium for a few minutes, stirring frequently. Allow to cool for a few minutes. Lastly add the yogurt, steamed spinach and cooked spice oil to a food processor or babycook and puree together. You may want to add a touch of the reserved cooking liquid if needed to reach the desired consistency. Purees can be as chunky as your baby is ready for- it’s up to you. This recipe will keep up to 3 days in the fridge or 3 months in the freezer. This recipe will fill about 3 ice cube trays (15-30 servings).
