Oatmeal Raisin Cookies {Gluten-Free}
These cookies are a wonderful treat, light on guilt and heavy on yum. They were a big hit with my daughters, husband, mother and niece. I love how chewy and soft they are. It's hard to miss gluten with cookies like these!
Oatmeal Raisin Cookies {Gluten-Free} - 10 months+
Ingredients:
1 cup All-Purpose Gluten-Free Flour (I use THIS)
3/4 cup Oat Flour (certified gluten-free)
1 tsp Baking Powder
1/2 tsp Baking Soda
1/2 tsp Sea Salt
1 tsp Xanthan Gum
1/2 tsp Cinnamon
1/2 tsp Nutmeg
3/4 cup Coconut Oil or Coconut Butter
1 cup packed Brown Sugar
2 tsp pure Vanilla
2 Eggs
3 cups Rolled Oats (certified gluten-free)
1 cup Raisins
3/4 cup Oat Flour (certified gluten-free)
1 tsp Baking Powder
1/2 tsp Baking Soda
1/2 tsp Sea Salt
1 tsp Xanthan Gum
1/2 tsp Cinnamon
1/2 tsp Nutmeg
3/4 cup Coconut Oil or Coconut Butter
1 cup packed Brown Sugar
2 tsp pure Vanilla
2 Eggs
3 cups Rolled Oats (certified gluten-free)
1 cup Raisins
Preheat oven to 350(f) degrees. Whisk together flours, powder, soda, salt, xanthan gum and spices then set aside. Cream together coconut oil and sugar until almost fluffy. Add vanilla and mix again. Add eggs one at a time beating after each one. Slowly beat in the flour mixture until a dough forms. Gently stir in oats till well combined. Lastly fold in raisins. Drop spoonfuls on to a parchment lined baking sheet about and inch apart. Gently flatten a little with a spoon. Bake for 10-12 minutes and cool on a wire rack. Cookies will be very soft when right out of the oven but harden at bit as they cool. They will remain chewy though. Store in an airtight container. Makes about 2 dozen.
