Banana Crepes


This recipe is my current favorite (we may have had it 3x this week).  The easiness to deliciousness ratio is exceptional!  My girls love helping me toss the ingredients in the blender! They really love squeezing a dab of honey on to each crepe (some days).  Personally I think they are plenty sweet without the honey but either way they are delicious. (And crazy healthy- only 5 ingredients)

Banana Crepes - 9 months+
Ingredients:
2 RIPE Bananas, pealed
4 large Eggs
1 tbsp Coconut Milk (optional)
1/4 tsp Cinnamon
1/4 tsp Nutmeg
1/4 tsp pure Vanilla Extract (optional)
1/4 cup Pecans, chopped

Heat a medium frying pan (or crepe pan if you have one) with a little bit of olive or coconut oil (to prevent sticking).  Add all of the ingredients (except pecans) to a blender and whizz for about 30 seconds (till well combined).  Make the crepes like you would pancakes but thinner.  Flip carefully, crepes are slightly more fragile than pancakes.  My pancake rule applies to this recipe as well: the first one is always ugly.  Top with pecans, if desired. Makes about 6-8 medium crepes.  


This recipe is dairy-free and gluten-free.
