Oatmeal Chia Donuts
These donuts are so healthy they make a great anytime breakfast but since today is my daughter's 3rd birthday (sniff sniff) we decided to dress them up with some dye-free sprinkles! We all gobbled them up at record speed!
Ingredients:
3/4 cup Oat Flour (I use gluten-free)
1/2 cup Chia Seeds
1 ½ tsp Baking Powder
1/4 tsp Sea Salt
1/4 tsp Cinnamon
1/8 tsp Nutmeg
1/2 cup pure Maple Syrup
1/3 cup Coconut Milk
1-2 tsp Pumpkin Purée (optional)
1 tsp pure Vanilla
Organic Powdered Sugar or Dye-Free Sprinkles (optional)
Preheat
the oven to 325 degrees F. Lightly
grease a donut pan with coconut oil.
Combine dry ingredients; flour, chia, baking powder, salt, cinnamon,
nutmeg, Whisk together the maple syrup,
milk, pumpkin and vanilla. Stir wet mixture into
dry until combined. Add the batter to
the donut pan. Bake 15-20 minutes, until
a toothpick inserted in to the donut comes out clean. Sift a little powder sugar onto warm donuts,
if desired. A healthy, fun treat.
