100 Days of Real Food Cookbook - {{RECIPE}} (Giveaway Completed)
I recently received the new cookbook by Lisa Leake, 100 Days of Real Food. Lisa writes the amazing website of the same name. It is one of my favorite websites so I was overjoyed at the opportunity to receive her new cookbook.
Like Lisa, I discovered real food as an adult and had to reverse the way I ate and the way I thought about food. The benefits of eating real, whole food that I make myself have been endless plus being able to share it with others brings me so much joy and fulfillment. Little by little I feel we are making a difference as more people choose real food over the highly-processed, artificial food that is sold in mass in this country.
I love they way the book is divided in two parts. The first part explaining how she made the transition and how you can too. The second part is the recipes organized by category. They recipes are simple and fun, perfect for cooking for and with your family. Very inspiring. Lisa writes so honestly it really feels like you're having a conversation with a good friend as you read it.
Lisa has generously given me permission to share one of the (fantastic) recipes from her new book. Here is her recipe for Shortcut Eggplant Parmesan. This is something My husband and I used to eat often when we lived in NYC and you could find amazing dishes at little italian places on almost every corner. I made this recipe and it was a hit with my family. I used GF whole grain oat flour and made two different pastas, whole wheat angel hair for them and a quinoa and corn blend for me. I also used the tomato sauce recipe in the book using garden tomatoes I had puréed and frozen a few weeks ago and it was fantastic. If you're using a store bought jar look for one with few ingredients and a low salt content.
Here is my 2 yr old enjoying the recipe! I didn't even know she liked eggplant.

ReplyDeleteMy kids all love nuts, even raw, unsalted varieties, so we eat a lot of those. Oh, and raw pumpkin seeds with raisins. Yum!
