Fruit'shi
This recipe is a fun take on sushi. I remember having some fruit and rice sushi rolls at a restaurant years ago and decided to attempt a healthy recreation. The result...a kid-friendly recipe that kids love helping to make and love to eat. It makes a great snack, breakfast or treat for a lunchbox! My girls love eating them with chopsticks, although they usually get frustrated and use their hands...but it's good practice.
Fruit'shi
Ingredients:
• 1
cup Sushi Rice, or other rice
• Water
•¼ cup unsweetened Coconut Milk
•1 tsp Maple Syrup
•1 tbsp Chia Seed
•¼ tsp Cinnamon
•¼ tsp Nutmeg
•Fresh Fruit, chopped (for example
berries, grapes, kiwi)
Rinse rice in cool water till the water runs clear. Soak rice for 20-30 minutes in 3 cups water. Add the rice and soaking water to a medium
sauce pan and bring to a boil, cover and simmer for 20 minutes. (You can also
use pre-prepared rice and skip this step).
Mix cooked rice with coconut milk, maple syrup, chia, cinnamon and
nutmeg. Allow to cool in the fridge for
at least 30 minutes. Spread out a scoop
of rice onto parchment paper or plastic wrap in a ¼ inch thick rectangle. Add fruit to the middle in a tight row. Gently use the parchment or plastic wrap to roll
together. Place in the fridge for at
least 20 minutes up to an hour. Slice
thin fruit'shi pieces and enjoy!
