Vanilla Fruit Salad
In our house fruit salad often is simply fruit...together...in a bowl. Sometimes though we like to get a little creative. I love this recipe because it's easy yet adds another level. Plus the combination of vanilla, citrus and berries is divine. Children love helping to make this recipe and it's a wonderful sensory experience for them {make sure to let them touch and smell the vanilla beans}.
Vanilla Fruit Salad
Ingredients:
3 Kiwis, sliced
1-2 cups Berries (fresh)
1/2 cup Melon, cubed
1/2 cup Grapes, halved
3 tbsp Orange Juice
1 tbsp Orange Zest
1 tsp Honey
2 Vanilla Beans
In a medium bowl combine the juice, zest and honey. Cut open the vanilla beans and scoop out the black seeds and add to the juice mixture. Whisk well. Gently add all of the fruit and fold all together. Serve chilled. Enjoy!!
