Cocoa-Nana Muffins
Get your chocolate fix with these easy and healthy muffins! Perfect for breakfast or packing in a lunchbox. Warning: So yummy your children, spouses and or pets will try to steal them from your plate.
Cocoa-Nana Muffins
Ingredients:
2 RIPE Bananas
1 1/2 cups Oats (I use Gluten-free)
2 tbsp pure baking Cocoa (unsweetened)
1/3 cup pure Maple Syrup
2 Eggs
1 tsp aluminum-free Baking Powder
Preheat oven to 350(f). Grease a muffin
tin (I use coconut oil). Using a food processor blend 1 1/2 bananas, oats, maple syrup, cocoa for about 30 seconds. Add the eggs and blend for about 15-20 seconds.
Lastly add the baking powder and blend for about 20-30 seconds (make sure to
add last so your muffins will rise). Fill muffin cups about 1/2
to 2/3 full of the batter, top with a thin slice of banana. Bake for 20-30 minutes, until set. Allow to cool. Makes 12 (or 20-24 mini, which will take about 10-15 mins in the oven).
