Double Chocolate Chia Pudding
This is our new favorite chia pudding around here. It packs a powerful nutritional punch with healthy fats, potassium, fiber, protein and Omega-3 (just to name a few) yet it tastes sweet and creamy. The average store bought chocolate pudding cup contains 16 ingredients many of them hard to pronounce. This recipe has just 7 ingredients, and I bet you can pronounce them all...
Double Chocolate Chia Pudding
Ingredients:
1/2 a RIPE Avocado
1 can Coconut Milk (I like this one)
1/4 cup Maple Syrup
3 tbsp unsweetened Cocoa Powder
1/2 cup Chia Seed (black or white)
1/2 tsp Vanilla
2 tbsp Chocolate Chips
Scoop the green goodness from the avocado and add to a blender. Add the coconut milk, maple syrup, cocoa, chia and vanilla as well and whizz up till smooth (it will still contain some texture). Pour into a container with an airtight lid and stir in the chocolate chips and allow a 5-10 minutes for the pudding to thicken. Serve with fresh berries if desired. Store leftovers in the fridge for up to a week or 2 months in the freezer. This makes a great addition to any lunch box!
