Red Heart Hummus
Here's a recipe that was a big hit at a recent Valentine party with both parents and kids. My two year old probably ate half of it alone, she just couldn't get enough. I love how simple it is and yet tastes amazing. It's another one of those recipes that's so easy to make you almost feel guilty about all the compliments it receives, almost.
Red Heart Hummus - 11 Months +
Ingredients:
1 (15 oz) can White Beans, drained and rinsed
1 small Red Bell Pepper, washed and sliced
1/2 cup Olive Oil
1 clove Garlic
1 tsp Sea Salt
Juice from ½ a small Lemon
Using a food processor or blender add all of the ingredients except oil and begin to blend, stream in the oil till a creamy consistency is reached and the hummus is well mixed. This recipe will keep in the refrigerator for 3 days and for 3 months in the freezer. A bright and creamy dip that goes great with veggies, pretzels or sweet potato chips!
