Groovy Green Pancakes
Ingredients:
2 bananas, RIPE
4 Eggs, large
1/3 cup uncooked Oats (We use Gluten-Free)
1 Tbsp Almond Butter (any nut or seed butter will work)
1/2 cup Spinach, fresh
1 tsp Baking Powder
Coconut Oil, for cooking
Raspberries, optional
Maple Syrup, optional
Using a blender, blend together bananas, eggs, oats, almond butter and spinach for a minute or two till well combined. Add baking powder and give it a quick whizz being sure not to over-mix. Heat a frying pan or griddle to medium-low heat. Add a little coconut oil to prevent sticking. Ladle about 2-3 tbsp of bater for each pancake. Once the pancake starts to bubble flip them. Serve warm with raspberries and maple syrup!
