Kale-a-mole


This recipe has quickly become one of our favorite. The kale adds more bright green goodness with extra flavor and nutrition. I love filling romaine lettuce leaves with it and my youngest daughter eats it right from the spoon, as you can see in the video. The perfect twist on guacamole...

Kale-a-mole
Ingredients:
2 RIPE Avocados
1/2 Lime
1 cup fresh Kale, finely chopped
1 tbsp Red Onion, chopped
1 tsp JalapeƱo, finely chopped or 1 tbsp Sweet Pepper, finely chopped
1 tbsp Cilantro, chopped
pinch Cumin
Salt and Pepper to taste

Cut open the avocados and remove the seeds, scoop the green goodness into a medium bowl. Squeeze the juice from the lime into the bowl, zest some of the peal for an extra pop of flavor. Add all of the remaining ingredients and mash with a potato masher or large spoon till well combined. Serve with fresh veggies, chips, quesadillas, tacos...the possibilities are endless!
