Lemon Spring Pasta


It's been a busy spring full of opportunities and events so I haven't been able to share as many recipes as I would like. I do have a ton of great ones to share with you in the next few weeks, though.

This recipe is easy and fast to make, perfect for dinner (when time and patience are in low supply). But the best part is how incredibly delicious it is. So make it, close your eyes and take a bite and if you can drown out the noise of your family chaos in the background you'll feel like your sitting at an upscale little bistro. It's fresh, light while still being filling...perfect for spring. My daughters even liked it, which is saying a lot...they have a love/ hate relationship with peas.

Lemon Spring Pasta
1 8oz. package of Pasta (I use Quinoa Pasta for GF)
Water for boiling
1 cup frozen Peas
1/4 cup Almonds (I use whole raw but you could use slivered or sliced)
1/4 cup Protein such as cooked chicken sausage, grilled tofu or cooked turkey bacon
2 tbsp Earth Balance or Butter (I used Avocado Oil Spread)
Juice from 1 Lemon
Salt & Pepper to taste

Cook the pasta according to package directions. Add the frozen peas to the cooking pasta when there is about 4-5 minutes left of cook time. Drain pasta and peas and return to pan. Toss with all of the remaining ingredients (the hot pasta will melt the earth balance or butter pretty fast). Serve warm, enjoy!
