As Winter winds down (fingers-crossed) most of us are looking ahead to spring and summer and beginning to plan trips. Taking a road trip seems to be on everyone's list this year. Gasoline prices are lower, making it possible for even more people to take a road trip. Finding healthy food on the road has become easier in recent years yet it's still a challenge. A rest stop in the middle of a highway probably doesn't have a whole lot of healthy options. I have rounded up a list of my favorite recipes that are perfect to make and pack for a road trip. Whether you're driving to a family wedding in Nebraska or to the coast to visit the beach, having a ton of healthy snacks will help bring you a little sanity back (that is until your 5 year olds starts asking if you're there yet for the 568th time).
