Peppermint Snowball Bites
This is one of those perfect "last minute" holiday treats you can make in just a few minutes. I love that they are healthy and only have a few ingredients. My daughters love these and usually end up fighting over the last one (that is if I don't secretly eat it first). It's also a great recipe that even toddlers can help with...they are great snowball rollers.
Peppermint Snowball Bites
Ingredients:
1 1/2 - 2 cups Shredded Coconut, unsweetened + extra for coating
¼ cup pure Maple Syrup
2 tbsp softened Coconut Oil
1 tsp Peppermint oil/ extract
Pinch Sea Salt, fine
1/4 tsp Cardamom
¼ cup pure Maple Syrup
2 tbsp softened Coconut Oil
1 tsp Peppermint oil/ extract
Pinch Sea Salt, fine
1/4 tsp Cardamom
In a food processor add coconut, maple syrup, coconut oil, peppermint, salt
and cardamom. Processes until well combined. If the dough is still too sticky add more coconut. Roll the mixture into small balls then roll each one in extra coconut. Refrigerate for about 10 minutes before
eating. Store in the fridge (in an
airtight container) for up to a week.
