Winter Salad with Homemade Cashew Cranberry Dressing


Here is a wonderful combination of flavors that can turn just about anyone into a salad lover.  The homemade dressing is bursting with flavor and an easy way to use fresh cranberries - no cooking required! 
Winter Salad with Homemade Cashew Cranberry Dressing
Ingredients:
6-8 cups fresh Greens ( I use a blend of romaine and kale)
1 cup fresh Broccoli, chopped
1 cup fresh Carrots, shredded
1 large, ripe Pear, thinly sliced
1 cup of fresh Blackberries
Seeds from a Pomegranate 
3/4 cup Sliced Almonds

Dressing:
1/4 cup Fresh Cranberries, rinsed well
1/4 cup Cashews
1/3 cup Apple Cider Vinegar
1 tsp Mustard
1/4 cup Honey
1/4 cup Olive Oil or Sunflower Oil
Toss the greens, veggies, fruit and nuts together in a large bowl. Add all of the dressing ingredients to a blender and purée until smooth and creamy. Warm the the dressing in a glass jar in the microwave or a small saucepan on the stove, if desired. Dress the salad when you are ready to serve.  Store leftover dressing (in the fridge) in an airtight container for up to a week.
