Citrus Salad
I love this salad for having people over or taking to a BBQ. Great for the upcoming long weekend to celebrate Memorial Day. It's the perfect flavor combination plus the colors make for excellent presentation. I can honestly say even my girls ate some. My 2 year old may have only ate the pistachios and pomegranate but it's a start.
Citrus Salad
Ingredients:
4-5 cups (about) Greens (I like a romain, spinach and kale mix)
2 large Carrots, pealed and diced
1/2 cup Grape Tomatoes, halved
1/4 cup Pistachios, shelled
3 small Oranges or Clementines, pealed and cut into 1/2 inch pieces
1/4 cup fresh or dried Pomegranate Seeds
Dressing:
1/4 cup Balsamic Vinegar
1/4 cup Olive Oil
3 tbsp Orange Juice
3 tbsp Pomegranate Juice
Toss all of the salad ingredients in a large bowl. For the dressing whisk the ingredients together until well combined. Toss with the salad or serve separately. Enjoy this rainbow of salad goodness!
