Mango Lassi Cookies



I love a good Mango Lassi (basically a spiced yogurt and fruit smoothie traditional in many types of Indian cuisine).  Once again it was my husband who first introduced them to me.  I decided to create a fun recipe for the multi-cultural themed family night at my daughter’s preschool.  So I turned the drink into a cookie.  These cookies are soft, fluffy, yummy and believe it or not healthy!  PS. Mango Lassi Cookies - 12 Months+
Ingredients:
1/2 cup butter or Earth Balance
1/2 cup organic cane sugar
1 egg
2 tablespoon honey
1 mango (pureed)
1/2 cup Plain Greek Yogurt
1/2 tsp vanilla
2 tsp baking powder
2 cups whole grain flour
1/8 tsp salt
1/4 tsp ground cardamom
1/2 tsp ground cinnamon
1/2 tsp ground ginger
1/2 tsp nutmeg
1/2 cup Pistachios (chopped)

Preheat oven to 350F.  Line two baking sheets with parchment paper.
To puree your mango, cut into cubes (check out mango cutting 101 video), discarding peel and seed, whizz up in a food processor.  Cream together butter and sugar until fluffy. Beat in the egg. Stir in the mango puree, yogurt,  vanilla and honey just until combined.  Whisk together the dry ingredients until well combined. Gradually combine the wet and dry ingredients just until combined and fluffy. Fold the pistachios in gently.  Using a spoon, drop about a tablespoon for each cookie, flattening them slightly with a spoon.  Bake for about 10-12 minutes.  Depending on the size, this recipe makes about 2 dozen cookies.
